Ceremonial Grade

The top of the range. Deep even green, no bitterness on the finish, built to be drunk on its own or as koicha. A special blend rather than a single lot, which is how batch-to-batch consistency is held across a season.

Café & Bakery Grade

The workhorse, and it works two jobs. In milk it holds its colour and tea character through a full-size latte without being over-dosed. In the oven it stands up to heat and sugar where a drinking grade would flatten out.

Baking & Culinary Grade

Strong tea flavour with a slight astringency and a subtle grassy aroma — the volume grade for kitchens working at scale, where the matcha has to survive heat, sugar and flour and still read as matcha in the finished product.
